Easy Chocolate Chip Cinnamon Rolls

Chocolate Chips and cinnamon rolls combined plus icing….yes, please!

Ingredients

For the rolls:
    • 1 can Crescent Rounds Dough
    • 2 tablespoons butter, melted
    • ¼ cup sugar
    • ½ tablespoon cinnamon
    • ½ cup mini chocolate chips
For the Vanilla Icing
  • 1 Tablespoon of melted butter
  • 2 teaspoons pure vanilla extract
  • 1 cup powdered sugar
  • 4-6 Tablespoons of heavy whipping cream or whole milk

Instructions

  • Preheat oven to 375.
  • Lightly grease an 8-inch cake pan with non-stick spray; set aside.
  • Separate dough into 8 rolls and unroll.
  • Brush each piece of dough with melted butter.
  • In a small bowl, mix together cinnamon and sugar.
  • Evenly divide and sprinkle a generous amount of cinnamon-sugar over each roll.
  • Evenly divide chocolate chips and spread over cinnamon-sugar.
  • Carefully roll up each dough, pinching seams together.
  • Arrange the rolls 1 inch apart in the prepared cake pan.

  • Bake for 15 to 17 minutes, or until tops are golden brown.
  • While rolls are cooking, make the icing.
  • Melt the Tablespoon of butter in the microwave.
  • In you mixing bowl, mix together the butter, vanilla, and powdered sugar.
  • Add in the whipping cream (or milk), little by little until you reach desired consistency.  I like a thick, spreadable icing, so I tend to use closer to 4 Tablespoons of the cream.  The more cream you add, the thinner icing you will have. If you get it too thin, add more powdered sugar.
  • The nice thing about icing is that it is very forgiving. You can add a little of this or a little of that and make a super yummy icing!

Cow Appreciation Day 2013

So tomorrow is Cow Appreciation Day at Chick-Fil-A. What does that mean?  If you dress head to toe like a cow, you get a free meal. If you partially dress like a cow, you get a free entree.  I thought it would be fun to dress the kids up and head over to Chick-Fil-A!  It’s not really about the free food….more about a fun project for the kids and I to complete and a for a fun lunch date!

So the kids and I started by making t-shirts.  I painted a Chick-Fil-A slogan onto each shirt. I then outlined spots for the kids to paint.  They had a blast painting their shirts:)  Next we made cow headbands. We took a cheap piece of felt and made a headband for each kid.  I cut cow ears out of felt too and then sewed them onto the headbands.  For the girls, I made black and white tutus.  For Connor man, I made a nice cow tail.  Here are a few pictures of our costumes.  I will post kids in costumes tomorrow!

White Queso

I have been on the hunt for a true white queso dip….you know like the ones served in Mexican restaurants! Only out here the Mexican restaurants serve orange base cheese dips…not white base cheese dips like the south. I miss my southern white queso:(  I have tried about 4 recipes so far, and most have flopped.  Until tonight that is, I found a recipe worthy of making again. I will say it is NOT like the southern dip I am trying to make.  It’s more like a traditional cheese dip with velveeta cheese and rotel….only no velveeta in this one. Real cheese my friends…parmesan, cream cheese, and monterey jack. It makes a lot, so have some friends over and enjoy!

Honey Wheat Bread

Bread, bread, and more bread….I love making bread!  Found this recipe and gave it a try! Pretty easy to make, and you can’t beat the taste! Give it a try!!

 

Honey Wheat Bread

1 cup warm water
2 teaspoons active dry yeast
3 tablespoons honey
3 tablespoons vegetable oil
1 1/2 cups whole wheat flour
1/2 tsp kosher salt
2 cups all purpose flour

Directions:

  • Sprinkle yeast on top of the warm water and then stir in the honey. Let sit until bubbly (about 5 minutes).
  • Using the dough hook on your stand mixer, stir in the whole wheat flour, vegetable oil and salt.
  • Slowly add in half of the all purpose flour. Knead the dough for a few minutes adding more flour as needed until it all comes together. You may not need to use the entire two cups of all purpose flour.  (I used 1.5 cups of all purpose flour.)
  • The dough should form a ball and be slightly sticky to the touch.
  • Place dough in a greased bowl, cover with saran wrap, and allow to rise until doubled, about 60 minutes. *Because I am lazy, I use the same bowl for making and rising. When I finish kneading the dough, I use about a Tablespoon of vegetable oil to lightly grease the dough and bowl.
  • For a quicker rise, turn your oven to 200 and let it preheat. Turn off oven and place your bowl into the oven.  This should make the dough rise faster so check on it after 30 minutes.
  • Punch down dough. Roll dough into a rectangle about the size of your loaf pan.  Roll into a log to form a loaf.

  • Place in well greased  loaf pan(seam side down) and allow to rise until the dough is about 1 inch above the pan, about 60 minutes.

  •   Bake at 375 degrees for 25-30 minutes.
