Homemade pizza dough

I never knew how easy making your own pizza dough really was until about 6 months ago….I will never go back to buying premade pizzas! Here is a recipe from Lauren’s Latest that is easy to make and makes great pizza dough!

1. In your mixer bowl, combine one cup of warm water and 1 Tablespoon of honey. Sprinkle 2 and 1/4 teaspoons of yeast on the top. Let the yeast do their magic for about 5 to 10 minutes until the mixture looks bubbly!

2.  Add two teaspoons of kosher salt, 2 Tablespoons of olive oil, and 2 cups of bread flour. Use the dough hook to combine. Add in one more cup of bread flour. The dough should start to pull away from the sides of the bowl.

3. Let the mixer knead the dough for 6 minutes and it should look like this. Not sticky!

4.  Place the dough back into the bowl and lightly grease with one Tablespoon of vegetable oil. Cover with saran wrap and place in a warm spot to rise. Should take about 30 minutes depending on the warmth of your house. You want the dough to double in size.

5. Roll out your dough, prebake at 500 for 4 minutes or until light golden in color, top with your favorite toppings, and then bake for an additional 5 to 8 minutes until cheese is nice and melted.

*This recipe makes enough for three small pizzas or two medium pizzas.

Baked Glazed Donuts

Look yummy?  It was an early morning around here, so the kids and I set out to make some donuts. It’s actually very easy and kid friendly!

Ingredients:

  • 1 cup all-purpose flour
  • 6 tablespoons white sugar
  • 1 teaspoon baking  powder
  • 1/4 teaspoon cinnamon
  • 6 tablespoons buttermilk
  • 1 egg
  • 1/2  teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • For the glaze:
  • 1/2 cup (or more) powdered sugar, depending on the consistency you’d like
  • 1/2 teaspoon vanilla extract
  • 1-2 teaspoons whipping cream

Directions:

  1. Preheat the oven to 325 and lightly grease a donut  pan.
  2. Mix together the flour, sugar, baking powder, and cinnamon in a bowl.
  3. In a small bowl, combine the buttermilk, egg, and butter, whisking to  combine.
  4. Add the wet to the dry ingredients and mix well with a wooden  spoon. The batter will be thick.
  5. Scoop batter into a large Ziploc bag. Snip end of bag and pipe into donut pan.
  6. Bake for 8 to 10 minutes.
  7. To make the glaze: Whisk together the powdered sugar, vanilla, and cream until  smooth. Add more liquid or powdered sugar as needed to get the consistency you  prefer.
  8. Allow donuts to cool on wire cooling rack until cool enough to dip into the icing.
  9. Place dipped donuts back onto rack to allow the excess icing to drip off.
  10. Decorate with sprinkles if you dare!

Peanut Butter Cookies with Reeses Pieces & Chocolate Chips

Not too long ago, I found a blog that I could spend hours browsing recipes and looking at pictures on!  It’s called “Buns in the Oven & Not the Baby Kind”. I have made four different cookies from the site and each turned out so well!  Today my husband requested these peanut butter cookies with Reeses pieces and chocolate chips…to which I am happy to make:)

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup brown  sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 3/4 cups  flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Reese’s  Pieces
  • 1 cup milk chocolate chips

Directions:

  • In the bowl of a stand mixer, cream together the butter, peanut butter, and  sugars until light and fluffy.
  • Beat in the egg and vanilla.
  • In a  medium bowl, combine the flour, baking soda, and salt.
  • Gradually add the flour mixture into the creamed mixture and beat until well combined.
  • Fold in the Reese’s Pieces and  chocolate chips.
  • Chill the dough for at least 30 minutes.
  • Preheat oven  to 350 degrees and line a cookie sheet with parchment paper.
  • Make small balls of dough and place onto baking sheet 2 inches apart and bake for 8 minutes.
  • Let the cookies set on the baking sheet for 5 minutes to set up before  transferring to a wire cooling rack.

Peppermint Patties

I love peppermint patties…but not the store bought kind with a ton of random additives. This is a super easy recipe and is AMAZING!  My only problem is not eating the entire batch in one sitting;)

Ingredients:

  • 2 1/2 cups powdered sugar, divided
  • 1 1/2 Tablespoons light corn syrup
  • 1 1/2 Tablespoons water
  • 1/2 teaspoon pure peppermint extract (can use up to 1 teaspoon to increase minty flavor)
  • 1  Tablespoon vegetable shortening
  • 1/2 Tablespoon butter
  • Baker’s Real Milk Chocolate Dipping Chocolate, 7 oz container
 Directions:
  • Beat 2 1/4 cups powdered sugar with corn syrup, water, peppermint extract, shortening, butter and a pinch of salt using an electric mixer at medium speed until just combined.
  • Knead on a work surface dusted with remaining 1/4 cup confectioners sugar until smooth.
  • Roll out and cut into circles with a small biscuit cutter.
  • Place circles onto a cookie sheet and freeze for 30 minutes.
  • Melt dipping chocolate and dip frozen patties!
  • You can place the peppermint patties into the fridge to set the chocolate faster or leave on countertop.
  • I store mine in a sealed container in the fridge.

*For a fun variation, you can tint the dough different colors! I once made orange and blue peppermint patties before a Gator football game.  Think of all the fun you can have:)
