Soft pretzels….just like the ones you buy at the mall!

Who doesn’t love a soft pretzel while out shopping at the mall? I certainly do! I saw this recipe in my Food Network magazine and had to try it immediately! This recipe is the best I have ever tried….perfect mall like pretzels and not too hard either!

Ingredients (makes 12 pretzels):

  • 3 Tablespoons of unsalted butter, plus more for brushing melted butter on pretzels after baking
  • 2 Tablespoons dark brown sugar
  • 2 and 1/4 teaspoons of active dry yeast (or one packet)
  • 2 cups warm water
  • 6 cups of all purpose flour
  • 2 teaspoons of kosher salt, plus more for sprinkling
  • 2/3 cup of baking soda and 10 cups of water (for boiling pretzels)

Directions:

  1. In your mixing bowl, combine 2 cups of warm water with 2 T brown sugar and 3 T butter.  Sprinkle 2 and 1/4 teaspoons of  yeast on top and let sit for 5 to 10 minutes until yeast is bubbly.
  2. Add 3 cups of flour and 2 teaspoons of salt. Using the dough hook, mix on low speed. Add in remaining 3 cups of flour and mix again on low speed. Once the flour is incorporated, scrape down sides and mix on medium speed for a few minutes until the dough starts to pull away from the sides of the bowl.
  3. Take dough out and knead for 5 minutes.
  4. Brush a large bowl with melted butter, put dough in, and turn over to coat the dough in the butter.
  5. Cover and let rise for about an hour.
  6. Punch dough down and divide into half.
  7. Divide each half into six pieces.
  8. Roll each piece into a 24 inch rope and shape like a pretzel.
  9. Place on parchment paper.
  10. Cover loosely with a towel and allow to rise again for 30 minutes.
  11. Using scissors, cut the parchment paper around each pretzel so that each pretzel is on its own sheet of paper.
  12. Bring 10 cups of water and the 2/3 cup of baking soda to a low simmer.
  13. Gently invert the pretzel and place it into the water with the parchment paper still attached.  Use tongs to peel the parchment paper off the pretzel.  This helps you keep that pretzel shape during the boiling process…..something I have always found to be the hardest part!
  14. Boil for 45 seconds on each side…work in batches so you don’t have too many in the water at the same time. Use a slotted spoon to remove pretzels and transfer to a baking sheet.
  15. Salt the pretzels before baking.
  16. Bake the pretzels at 425 for 12 to 15 minutes.
  17. Brush with melted butter upon pulling them out of the oven!

How to make play dough

I have tried quite a few play dough recipes; my all time favorite is a gingerbread play dough….I’ll be sharing that recipe as the Christmas season approaches. But for today I thought I would share a simple, inexpensive play dough recipe that is great for everyday play!

You will need:

  • 1 cup of all purpose flour
  • 1/2 cup of salt
  • 2 Tablespoons cream of tartar
  • 1 Tablespoon of vegetable oil
  • 1 cup of water
  • food coloring (optional)

Directions:

  1. Place all of the ingredients into a large pot on your stove top.
  2. Over medium-low heat, stir everything together until the dough loses its stickiness look and become hard to stir.  Takes maybe 3 or 4 minutes!
  3. Carefully pull dough out of pan and onto a sheet of parchment paper or a cutting board shown in my pictures.
  4. Knead the dough until it is no longer sticky and feels like the right consistency.
  5. Store in a sealed plastic bag!

Almond Sugar Cookies

Since the weather was a bit chilly today (snowy to be exact:), the kids and I made some almond flavored sugar cookies. Once upon a time, I didn’t think I was a fan of almond flavoring…..but let me be the first to say I am a huge fan! These cookies are so good….the flavor is so perfect in every way!

Let’s start by making the almond sugar cookie dough!

Ingredients for the cookies:

  • 1 cup of unsalted butter
  • 1 cup of granulated sugar
  • 2 eggs
  • 2 teaspoons of vanilla
  • 1 teaspoon of almond extract
  • 3 and 1/4 cups of all purpose flour
  • 1 teaspoon of baking powder (or leave it out so the cookies don’t spread)
  • 1/2 teaspoon of salt

Ingredients for the icing (optional):

  • 1/4 cup of cold water
  • 3 Tablespoons of meringue powder
  • 2 cups of powdered sugar
  • food coloring, if desired

Directions:

  • Using your mixer, cream butter and sugar until light and fluffy.
  • Beat in eggs, vanilla, and almond extract.
  • Combine flour, baking powder, and salt in a separate bowl.
  • Slowly add the flour mixture into the egg mixture until completely combined.
  • Dough will be sticky.
  • Divide the dough into half and place each piece onto a sheet of parchment paper.
  • Lay another piece of parchment paper on top of each piece of dough.
  • Use your rolling pin to roll out the dough to 1/4 inch between the two sheets of parchment.  This keeps it from sticking to your rolling pin.
  • Place rolled out dough into the fridge until well chilled. Around 30 minutes to an hour.
  • Use cookie cutters to cut our desired shapes. Re-roll the scraps and chill again before cutting more cookies. Time consuming part here, I know!
  • Bake cookies at 350 for about 9 minutes.
  • Cool completely before decorating.

If you want to make the royal icing to decorate:

  • In a bowl, combine the water and meringue powder. Use a whisk to mix until it is foamy. Add in the powdered sugar. Pipe or drizzle the icing onto cooled cookies! I thickened a small amount of the icing and used a decorating bag and tip to outline each cookie. I put the remaining icing in some cheap condiment bottles I found at Walmart. The kids did the “flood” icing for all of the cookies. They had a blast.

Fall Cookies

Now that it’s fall, here’s a fun activity to do with your kids.

  • Make your favorite sugar cookie dough.
  • Divide it into four pieces.
  • Use food coloring to dye each piece a different fall color….I used green, red, yellow, and orange.
  • Roll out the dough….here is a picture of my kids from last year.

  • Use leaf shaped cookie cutters to cut out leaves.

  • Use a toothpick to create the leaf veins.

  • Bake as you normally would. Colors will darken when baked.
