Blonde Brownies

I love chocolate, but surprisingly I am not a big fan of brownies. My husband once told me how he loved buying blonde brownies from the grocery store. As a result of that conversation a few years back, I searched for blonde brownie recipes. I tried a few before finding my favorite. I made blonde brownies for my parents last night….they are almost all gone:(  Thought I would share the recipe with all of you!

Ingredients:

2/3 cup butter, softened

2 cups packed light brown sugar

2 t vanilla

2 eggs

2 cups all purpose flour

2 t baking powder

1 t salt

 

Directions:

  1. Heat oven to 350 and grease a 9 by 13 pan.
  2. Beat butter, brown sugar, vanilla, and eggs on medium-high until well combined.
  3. On low speed, blend in flour, baking powder, and salt until a soft dough forms.
  4. Spread evenly into pan and bake for 20 to 25 minutes.
  5. Serve with vanilla ice cream and caramel sauce if so desired!

Surf and Turf

So I was looking for a way to make steaks without using the grill. I came across a pin on Pinterest that peaked my interest! I gave it a whirl on Valentine’s Day….I have been making it ever since. It is absolutely the best way to cook a tender, juicy steak. With my parents in town, I served steak and baked salmon for dinner last night.  My parents said my steaks rivaled the nicest steak restaurant they had ever eaten. Mom also loved the salmon! SO here are both recipes for you to try!

*You will need a cast iron skillet to cook the steaks! I also didn’t have sesame oil on hand, so I used olive oil instead for the salmon marinade!

Buttermilk Blueberry Bread

Want an amazing breakfast recipe that can be made the night before and cooked the morning of? Here is a wonderful recipe for a buttermilk blueberry bread! A favorite at my house!

Ingredients:

½ cup unsalted butter, room temperature
7/8 cup* + 1 tablespoon sugar**
1 egg, room temperature
1 tsp. vanilla
2 cups flour (set aside 1/4 cup of this to toss with the blueberries)
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk

 

* 7/8 cup = 3/4 cup + 2 tablespoons
** This 1 tablespoon is for sprinkling on top

Directions:

 

1. Preheat the oven to 350ºF. Cream butter and 7/8 cup of the sugar until light and fluffy.

 

2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.

 

3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.

 

4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 to 45 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

*You can make the batter the night before and store it (unbaked in the pan) in the fridge. The next morning, pull it out and bake as directed!

My Favorite Rolls

I LOVE bread and rolls are no exception. This is absolutely, hands down the best roll recipe I’ve tried! Working on rolls now, so here is a picture of the rolls rising! These are super soft and buttery….sure to please any crowd!

Ingredients:

2/3 cup nonfat dried milk

2 cups warm water

2 TB active dry yeast

2 teaspoons salt

1/4 cup sugar

1/3 cup butter (softened)

1 egg

5 cups bread flour

Directions:

  • Mix water and powdered milk in your mixing bowl. Sprinkle yeast on top and allow to rest for five minutes.
  • Add in salt, sugar, butter, egg, and 2 cups of the flour. Mix well.
  • Mix in two more cups of flour.
  • Add the fifth cup of flour little by little until dough comes together. I usually end up using the entire cup.
  • The dough will be a bit sticky…do not add more than the 5 cups of flour.
  • Grab a tablespoon of vegetable oil and drizzle over dough. This will keep dough from being so sticky and will also prevent it from drying out.
  • Work dough into a ball in your bowl and cover with saran wrap. Set aside and allow to rise until it doubles in size.  Takes 30 minutes to an hour.
  • Roll the dough out into a large rectangle  and cut into rectangular pieces.
  • Roll each rectangle into a roll shape.
  • Place on a lightly greased cookie sheet and cover with a towel.
  • Let the rolls rise until they are doubled in size.
  • Bake at 350 for 12 to 15 minutes.
  • Brush with melted butter when they come out of oven!
