Another way to cook a whole chicken in your crockpot…

So I can’t find a picture of this chicken cooked, but I can find my recipe! Trust me on this one….this is a super moist chicken cooked in your crockpot!

Ingredients:

4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 whole or quartered onion
1 whole chicken
Directions:

  1. In a small bowl, mix together all of the seasonings. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub chicken inside and out with spice mixture.  Loosen skin and rub seasoning between meat and skin.  Place onion into the cavity of chicken. 
  2. Season and place in crockpot in fridge overnight or season and throw right in crockpot and start cooking.
  3. Use crockpot temperature probe and cook to  a minimum internal temperature of 180 degrees F (85 degrees C).

Lemon & Garlic Whole Chicken in your crockpot!

I love cooking a whole chicken in my crockpot! Super easy to throw it in and let it cook. AND as a bonus we always have leftover chicken to use in making another dish the next night!  So here’s my new favorite way to cook a chicken!

Ingredients:

  • 4 lemons
  • 2-3 heads of garlic
  • 1 whole chicken 4 to 5 pounds
  • Fresh rosemary
  • All-purpose steak seasoning or salt and pepper
Instructions:
  1. Cut garlic heads and lemons in half and lay in bottom of crockpot.
  2. Cut the bottoms off the lemons so they lay flat.
  3. Add a sprig of rosemary, or any herbs.
  4. Remove insides from chicken, rinse chicken and pat dry.
  5. Season chicken well, inside and out, with all-purpose steak seasoning or salt and pepper.
  6. Lay chicken on top of garlic and lemon slices and stuff the chicken with a garlic head cut in half, and a lemon cut in quarters.
  7. Cover top of chicken with additional lemon slices and rosemary.
  8. Turn slow cooker to low, and cook for about 4 hours, or until chicken reaches 165 degrees.

*No need to add any liquid in during the cooking process. Just look at the picture above…all that juice is from the chicken cooking! This chicken is super moist!

Cream Cheese Crumb Cake aka Coffee Cake

My son has taken a liking to getting up before the sun comes up, so I have been using that time to try out some new breakfast recipes.  Found this recipe and it was delicious! My kids had fun trying to name it something other than coffee cake. They were worried when I called it coffee cake that it had coffee in it! But after one bite, they ate and ate.  They said it should be called sweet buttery cake! Give it a try if you want a super special breakfast treat. I would dare say this cake was even better the next day too!

All things Spider-Man Party

Our sweet little boy is turning 3!  He wanted a superhero party, so we went with Spider-Man! I wanted to keep it simple this year, so off to the park we went!  We had cake and cookies, a pinata, and fun superhero capes to wear while playing! It was a lot of fun!
