No Bake Granola Bars

A few days ago I posted a gluten free granola bar recipe, so today I am posting the same recipe just with a couple twists. I love a good recipe that is completely customizable and super simple to make! My husband told me these are like a candy bar only better!

Ingredients:

  • one cup of rice krispies
  • one cup of granola (can be left out)
  • one cup of oatmeal dry oats (if you leave granola out, add an extra cup of oatmeal)
  • 1/4 cup of brown sugar, packed
  • 1/4 cup of butter
  • 1/3 cup of honey
  • white chocolate chips (optional) or any other kind of chips your heart desires
  • Peanut butter or chocolate chips for the top drizzle (optional)

*With this recipe you always use one cup of rice krispies and two cups of either oats or granola. Today I did one cup of granola and one cup of oats instead of using two cups of the same ingredient.  Make sense?!

Directions:

  • In a medium bowl, mix the rice krispies, granola, and oats.
  • Stir in about a quarter cup of white chocolate chips if desired. Completely optional!
  • In a small sauce pan, melt the brown sugar, butter, and honey. Cook over medium heat. Once it starts to bubble turn heat down to low.  Cook for two minutes.
  • Pour liquid mixture over the dry ingredients and mix until combined.
  • Lightly grease a jelly roll style pan and press mixture into one side of the pan. Like this….

    • Let this cool for about 30 minutes.
    • Remove and cut into bars.
    • Just for fun I added a chocolate drizzle to some and a peanut butter drizzle to some.
    • To do the drizzle, just add some chocolate chips to a ziploc bag. Melt in the microwave for 20 second intervals until melted. Snip corner of bag and pipe onto cut bars. Let chocolate set and then enjoy!
    • This recipe makes about 8 bars.
    • Store bars individually sealed. I wrap each bar in saran wrap and then place all bars in a ziploc bag!

S’Mores Dip

Let’s just say this didn’t last long in my house!  Everyone loves a good S’Mores, and this dip gives you just that!

Ingredients:

  • 1 cup of milk chocolate chips
  • 1 cup mini marshmallows
  • 2 T milk
  • extra mini marshmallows for the top (around 1/4 cup)
  • graham crackers

Directions:

  • Melt chocolate, marshmallows, and milk in a sauce pan over medium heat.
  • Pour into an oven safe bowl.
  • Place mini marshmallows on top and broil until light brown.
  • Serve with graham crackers and enjoy!

Gluten Free Chocolate Chip Granola Bars

My daughter loves to take granola bars to school for snack. I started looking a bit closer at the ingredient list, and let’s just say I began a mission to find a homemade granola bar recipe. I love Lauren’s Latest blog and this recipe came from her site….it’s so easy and delicious. My favorite part is that you can completely control the ingredients and customize the bars however you might like. I started simple today but can’t wait to play around adding new things!

To Make Gluten Free Chocolate Chip Granola Bars you will need:

  • 1 cup of gluten free rice krispies
  • 2 cups of gluten free granola
  • 1/4 cup of butter
  • 1/4 cup of brown sugar, packed
  • 1/3 cup of honey
  • 1/2 teaspoon of vanilla
  • chocolate chips, if desired

To make the bars:

  1. Mix the rice krispies and granola together in a medium bowl and set aside.
  2. Mix butter, brown sugar, and honey together in a sauce pan and cook over medium to high heat.
  3. Once the mixture starts to bubble turn down the heat to low to medium heat, stirring constantly. Cook for two minutes.
  4. Remove from heat and stir in vanilla.
  5. Lightly grease a jelly roll pan and press the mixture into the pan. I pushed the mixture to one side to make sure my bars were pretty thick. You can totally make these bars however thick or thin you might like.
  6. If desired sprinkle with chocolate chips.
  7. Let bars cool for an hour or so before cutting.

*I actually made two batches of these today. The second batch wasn’t gluten free and used 2 cups of oats in place of the granola.

*You could add raisins, flax seed, nuts, cinnamon, white chocolate chips, etc! Have fun making these super simple bars!
