A cup of real mac n cheese

I came across a couple of posts on how to make mac n cheese in the microwave the other day and was instantly intrigued! I tried a few different recipes, but finally settled on my own version.  The nice thing about this is you can make one serving at a time quickly and without making a mess! You can use your favorite cheese and make it taste different each time!

So here’s what I do. I use a large coffee mug, fill it with about half a cup of noodles (whatever ones you have in your pantry), cover the noodles with water, and microwave for about 5 to 6 minutes. The water will overflow and make a mess in your microwave so you might want to put a bowl under the cup:)  If the noodles aren’t quite done, you can add a little water and place back in microwave for a minute or two.  When the noodles are done, drain the water.  I like to mix in a small drop of butter, a tablespoon or two of milk, and about 1/2 cup of cheese.  You can use more or less of any of these things and make it your own.  My daughter prefers Colby jack cheese with a little parmesan thrown it!  I would say it is best to grate your own cheese as it melts better!
