Easter Basket Cupcakes

While working on a photo book for my daughter, I came across a few cupcake pictures from a couple years ago. These are super cute for Easter, so I thought I would share!

First make cupcakes and icing! Tint some of the icing green.

Next pipe a white “nest” onto the cupcake.

Then add “grass” to the nest.

Use candy robin eggs to fill in the nest.

I used a pipe cleaner to create the basket handle and tied a cute little ribbon on top to finish it off.  You can use lots of things for the handles, but the pipe cleaners bend easily and stay in place really well!

Have fun! These super cute cupcakes were well received with my women’s Bible study group!

Baked Chicken Fajitas

Baked Chicken Fajitas Recipe:
(Serves 4-6)

Ingredients:
1 pound boneless, skinless chicken breasts, cut into strips
1 (15 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced
2 Tablespoon vegetable oil
2 teaspoons chili powder
2 teaspoons cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
12 flour tortillas, warmed to serve

Directions:

  • Preheat the oven to 400 degrees.
  • Grease a 13×9 baking dish.
  • Mix together chicken, tomatoes, chilies, peppers, and onions in the dish.
  • In a small bowl combine the oil and spices. Drizzle the spice mixture over the chicken and toss to coat.
  • Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.
  • Serve with warmed tortillas and enjoy!

Cream Cheese Snickerdoodles

Now here’s a cookie recipe for you! My cream cheese sugar cookie recipe (found here) is the most viewed recipe on my blog. With that said I thought I would try out adding cream cheese to a different type of cookie! I found a recipe on Pinterest for these cream cheese snickerdoodles. I only made minor changes to the original, and it turned out fabulous! This is a soft, thick, and delicious cookie!

Ingredients: (makes around 3.5 dozen cookies)

  • 2 sticks of salted butter, softened (1 cup)
  • 3 oz cream cheese, softened
  • 1 and 1/2 cups of sugar
  • 1 egg
  • 2 teaspoons of vanilla
  • 1/2 teaspoon of salt
  • 2 teaspoons of cinnamon
  • 2 teaspoons of cream of tartar
  • 1 teaspoon of baking soda
  • 3 and 1/4 cups of all purpose flour

Topping: (mix in a separate bowl to dip the cookie dough balls into later)

  • 1/3 cup of sugar
  • 1 heaping teaspoon of cinnamon

Directions:

  1. Mix butter, cream cheese, and sugar in you mixer until light and fluffy.
  2. Add in the egg and vanilla and mix well.
  3. In a separate bowl mix together the salt, cinnamon, cream of tartar, baking soda, and flour.
  4. Slowly pour the flour mixture into your butter mixture until well blended.
  5. Roll cookie dough into 1 inch balls and place onto parchment paper.
  6. Dip the cookie dough balls into the cinnamon/sugar topping mixture listed under ingredients.
  7. Bake at 350 for 6-8 minutes (depending on the size). Don’t overbake as you want these cookies to remain soft!

Two Ingredient Playdough

Turn hair conditioner and corn starch into playdough….but wait if messes aren’t your thing, you might want to have Grandma do this one with your kids;)  For me I feel like mess=fun!  This dough is quite different from regular playdough.  It smells so good due to the conditioner.  It’s kinda soft and silky but completely moldable!  So here’s how to make this two ingredient playdough if you dare…

To make the playdough:

Mix two parts corn starch to one part conditioner. For example, I used two cups of cornstarch and one cup of conditioner. Mix well. Don’t worry this will look like it will never mix in and make a dough but it will….just keep kneading it by hand if necessary. It is a little stickier at first but as you mix it gets better! Store in a sealed ziploc.

*This kept my kiddos busy for a solid hour and a half! Super fun and worth the mess!
