Sweet Potato Pumpkin Fries

These pumpkin fries were so fun to make. All you do is:

  • Peel a sweet potato.
  • Slice into thin round slices. I used my mandoline slicer.
  • Use pumpkin carving tools to cut out faces.
  • I brushed the potatoes with a tiny amount of coconut oil and a little salt.
  • Bake at 400 for 20-25 minutes.

 

 

Healthy Banana “Ice Cream”

Who knew you can freeze bananas and turn them into ice cream with a blender or food processor? I certainly did not, but now I do so I am sharing with you.

  • Take 4 bananas and peel them.
  • Cut them into little chunks.
  • Place bananas onto a plate and into the freezer for an hour or two until frozen.
  • Take the frozen bananas and put into your food processor.
  • Pulse until you get a creamy consistency. Be patient it takes a minute.
  • If you want you can add a couple of Tablespoons of peanut butter at the end!

Cookie Dough Pie

Does it get any better than eating cookie dough?? It’s a fave of mine and maybe yours too. This pie is incredible. The cookie dough is safe to eat uncooked and goes into a freshly made Oreo crumb crust and is topped with homemade whipped cream. For my birthday my sweet husband and the kids made this pie for me!
